About saving the chat info: there's a "Save Chat" option in the three dot ". . ." menu button to the right of the chat txt input area.
On Windows with the Zoom app this creates a meeting_saved_chat.txt in Documents/Zoom in a dedicated folder with a name format YYYY-MM-DD HH:MM:SS <meeting name> <meeting id>. For the chat I saved this folder is

Guessing a new timestamped "holder folder" is generated every time the chat is saved.
